Prawn Noodle

The ingredients: noodle, egg
The steps:
Dissolve paste with 4 cans (1can=400ml) boiling water (or anchovy broth).Blanch noodles with bean sprouts & transfer into bowl. Set aside. Garnish with sliced cooked chicken, half boil egg & cooked prawns. Pour boiling Prawn Noodle stock onto noodles when ready to serve. Sprinkle one tablespoon fried shallots and serve hot.




Nyonya paste for ponteh stew

The ingredients: 800g-1kg meat, Potatoes, 3 carrots, 5 pieces of shitake mushroom.
The steps
1. Prepare 800g-1kg meat (of your choice), 2 medium size potatoes, 3 carrots and 5 whole pieces of shitake mushroom.
2. Put a few tbsp of cooking oil in skillet and stir-fry the above for 2-3 minutes until fragrant.
3. Now add 1 packet of MKK Ponteh Stew Paste and 2 cups of water (as desired).
4. Slimmer for 30 minutes or until meat is tender. Serve hot with rice or pasta.



Malaccan nyonya paste

The ingredients: 1 kg Chicken, Potatoes or pineapple, Tamarind juice, coconut milk Basil
The steps
1. 1kg of chicken or meat of your choice (cut into small pieces) and add 1 packet of MKK Red Curry.
2. Mix thoroughly and stir-fry for 3 minutes.
3. Add 200g of potatoes or pineapple and simmer for 15-20 minutes till cooked.
4. Add a little water (or tamarind juice) or 1/2 cup of coconut milk fr a creamier curry.
5. Serve hot with rice, pasta or bread.



Lamb Shank Curry

The ingredients: 1 Pkt Mojo Kare Kare Paste for Meat, 2 Lamb Shanks (1 Kilo), 5 Small Potatoes, 1 Can (400ml) Water, Optional: 1 Cup Plain Yoghurt or 1 cup fresh milk
The steps
1. Simmer lamb shank in a pot over medium heat for 3 1/2 hrs or until the meat is almost falling off the bone.
2. Add in 1 pkt mojo kare kare mix. Stir well into the mixture. Add potatoes and continue to simmer till the curry is thicken, potatoes are soft, skim off the excess fat.
3. Add salt to taste. Serve with hot rice.



Lamb Curry With Potatoes

The ingredients: 1 Pkt Mojo Kare Kare Paste for Meat, 1kg lean meat (cut into cubes), 3-4 med size potatoes
Optional: 2 med size tomatoes, In place of water you can use, Plain Yoghurt ½ cup or ½ cup Fresh Milk
The steps

1. Heat pan and add 1 pkt Mojo Kare Kare paste and gently stir fry over medium heat, stir for 1 minute.
2. Add meat, and continue to stir fry for 2 mins. Add tomatoes and potatoes, stir fry another 1 min. Gently pour in liquids to cover. Reduce heat to simmer till meat is tender and potatoes are soft. Add salt to taste.



Seafood Curry

The ingredients: 400ml Tamarind mixture, Pineapple juice, Okra, Tomatoes, Seafood (squid, prawns, scallops, fish etc)
The steps:

Mix paste with 400ml Tamarind Mixture. Tamarind Mixture: 3 tbsp Tamarind paste with pineapple juice. Add 6 pcs okra, 2 medium tomatoes (cut to bite sizes). Cook 5 mins. Stir in 600g seafood, cook for 6-10 mins. (squid, prawns, scallops, fish etc). Adjust taste & serve hot.




Tom Yam Soup

The ingredients: Prawns or seafood, Lime 3 pieces, Fresh chillies 15 pieces
The steps:

Mix water and 1 Pkt Mojo Kare Kare Paste into saucepan. Bring to a gentle boil. Add in prawns or seafood simmer for 5 minutes and serve.
To make it extra sour, add juice of 3 limes. For extra heat, add fresh chillies.
